Karasumi

 

Returning from Japan and getting back on the road to Oregon was such a whirlwind, I didn't get to share any of my Tokyo highlights.

One of the stand out dishes I've been craving lately is karasumi paired with sake.

Karasumi, translates to "Chinese ink", Kara (China), sumi (inkstick) due to its shape resembling a Chinese ink stick.

It is salt cured fish roe, a softer analog of Mediterranean Bottarga. These used malt and sake in the curing process and they were absolutely delicious.

Fish roe is a great source of nutrients including vitamin B12, D, A, and omega 3. A great support for mood and neurological function.
