I've always been a big fan of family style Sunday dinners.

This is a campsite version I've been working on lately. It's my Canadian take on lomo al trapo, a Colombian steak tenderloin salt crusted and wrapped in a towel, cooked directly on coals. I wrapped mine in giant maple leaves from the campsite instead. The salt is so much fun to crack open just before serving and locks in moisture.

Can't wait to keep working this technique to perfection! Grateful to have locally sourced butchers like Sanagan's Meat Locker to fuel my backcountry endeavours.
